The only types of sausage casings that aren’t eaten are collagen, cellulose, and plastic casings. The thick collagen casing found in summer sausage and salami is inedible. Skinless sausages are made with cellulose casings that are removed before packing.

The outer covering or skin that retains the meat in form is referred to as sausage casing. The casings are employed to give the meat shape. The purpose of casings is to make it easier to prepare and eat sausage meat. They can also be used to prepare specific cuts of meat. 

Natural and artificial are the two basic categories.
